Chili Powder, Hatch Green, New Mexico
New Mexico Hatch Green chili powder, Capsicum annuum, is a medium-heat chile powder that measures 3,000-5,000 Scoville Heat Units (SHU). It is also referred to as green chili or chile powder or just Hatch green chile powder.
This chile powder is milled from New Mexico green chiles that are grown in the fertile farming valleys of New Mexico. These long, green peppers are a distant cousin to Anaheim Peppers from California, but with much more flavor and with a wider heat spectrum.
The New Mexico chiles that make up this powder are harvested before they fully mature to preserve the vibrant, sharp tang of unripe fruit. This harvesting results in a flavor profile which is vegetal and earthy, with a sharp, crisp, up-front heat and just a hint of smokiness.
